Veggies...YUM!

On www.LifeasMOM.com, she asked everyone to share their favorite recipes for fixing veggies.  My boys will eat a variety of veggies just steamed with a little butter and maybe a tich of salt.

Here is a favorite recipe of mine - Chili Roasted Sweet Potatoes
2 to 3 medium sweet potatoes
2 TBS olive oil
1 TBS sugar
1 tsp chili powder
coarse salt and ground pepper (can leave out salt)

Preheat oven to 425.  Cut each potato lengthwise into 8 wedges.  Half each wedge crosswise.  Toss the potatoes with olive oil, sugar chili powder, up to 1 tsp salt and 1/4 tsp pepper (You can toss them in a bowl or on a rimmed baking sheet).  Arrange wedges on a rimmed baking sheet.  Roast until potatoes are brown and tender, about 15 to 20 minutes.
